Ingredients (1 person): - 3 shallots - 1 garlic - 1/2 avocado - 1 egg - Bread crumbs - 4 slices of parmesan cheese - 1 tablespoon of extra virgin olive oil - Pinch of salt Makes 3 beautiful croquettes.

Finely chop the shallots (you can use spring onion or regular onion) and garlic.

Put them in the pan with a tablespoon of extra virgin olive oil to poach. Season with salt and pepper.
