Boil the water in a pan with the cinnamon.

Add the peeled and finely chopped apples and the 3 pitted dates.

Cover and let it boil over low heat for 30-45' (until you can crush the apples with a fork). ⚠️ it is important that depending on how you want the texture, add more or less water so that when you mash it all afterwards, you get the desired consistency).

When the apples are browned and softened, we grind them with a blender and let them cool in a container, which we will later keep in the refrigerator.
