Vegan mushroom croquettes 🍄

The first step is to choose the vegetables we want to use. Being mushroom croquettes 🍄, the main ingredient will have to be mushrooms 🍄. In addition, I have added onion 🧅, carrots 🥕 and zucchini 🥒. Once you have chosen the vegetables, chop them very finely to avoid any chunks. For this I have used a mincer but you can cut them as you like.

Mix all the already chopped vegetables in a frying pan 🍳 and sauté them until they are to your liking.

Add a glass of soy milk 🫛 and let it reduce until creamy to the mixture.

Add five teaspoons of breadcrumbs to make a dough suitable for making croquettes.

Now you have to let the mixture stand overnight in the refrigerator. I used a metal bowl, but you can use whatever you like.

The next day add the salt 🧂 and the rest of the spices: I used ginger and cinnamon, but garlic powder🧄, turmeric, soy sauce 🫛... or any other ingredient you can think of.

Take two plates: in one put the wheat flour 🌾 or the cereal you like and in the other put the remaining 5 tablespoons of breadcrumbs (although this ingredient is optional, you can skip it).

Roll the mixture into small balls. First roll them in the flour 🌾 until they are completely white, then roll them in the breadcrumbs if you want to give them a crunchier touch.

We are just finishing. Now put them in the oil fryer, in the air fryer or, as in my case, in the microwave for 10 minutes... you will be surprised how delicious they are.
