We start by cutting all the vegetables. We poach the onion and leek. When they are soft add the broccoli. I don't like to cook it, I put the lid on and it cooks like this. When it is almost ready, add the mushrooms and add pepper, garlic and onion powder.

Now we will make the quiche dough. Melt the butter and add the flour, water, salt and spices. We knead everything until we get a homogeneous dough. Flour the worktop and with the help of a rolling pin flatten and make a circle with the dough (about 3-4 mm thick).

We put it in the mold previously greased or floured (so that the dough does not stick) and trim the edges (if there is dough left over, you can make crissinis, little balls filled with cheese...).

We beat the eggs, the milk and all the spices. Add the vegetables we cooked at the beginning, stir everything well and pour it into the mold. Decorate as you like, with cheese, mushrooms...

We put it in the oven previously heated to 200° for about 20-25 minutes or until it is set. Once cooked, take it out of the mold, let it cool a little and EAT.
