Peel and grate the carrots. Shell and crack the walnuts. Mix and set aside.

Remove the stone from the date, mix with the milk and grind to a paste.

In a bowl, add the grated carrot and walnuts, the date paste, the 2 eggs (previously beaten), the tablespoon of olive oil and the cinnamon and stir.

Sift the flour with the baking powder and add to the bowl, stir until well blended.

Preheat the oven to 180°C. Grease a baking pan and add the mixture. Tap the mold a couple of times against the countertop.

Bake for 20-25 minutes at 180°C. Meanwhile we make the frossting (it is optional) we mix cream cheese with milk until we obtain a paste; we leave it in the refrigerator to cool.

When the baking time is over, we let it rest with the oven door open, after a while we take it out and add the frossting + walnuts on top.
