Gnocchi with mushrooms and crispy serrano ham

Pour a little oil in a frying pan and when it is hot, add a clove of garlic (remove the core which is the part that repeats). After two minutes add the mushrooms and cover.

After about 5 minutes we will see that the mushrooms have removed the water and with the steam they are almost cooked. Add the parsley (and salt and pepper to taste), mix and cover. After 2-3 minutes add the coconut milk, mix, lower the heat and leave uncovered for 5 minutes.

In the meantime, put a non-stick frying pan on the fire and when it is very hot, add the ham cut into strips. It will get crispy in 2-3 minutes. While waiting for the ham to cook, add the water for the gnocchi.

The mushrooms are ready, turn off the heat and let them rest. We will also remove the ham from the pan and leave it aside on a plate.

The gnocchi will take between 2 and 3 minutes and once they are ready we take them out of the water and put them directly into the mushroom pan. Stir them in our mushroom and coconut milk sauce for a couple of minutes over low heat.

They are ready to be served and decorated with the crispy ham! Buon appetito!
