Soak the lentils (as they are pardinas, I put them while preparing everything else, if they are the big ones put them the night before). Prepare all the ingredients

Clean, chop vegetables and chicken

Put everything in the pot raw, add a little EVOO oil, a pinch of salt, ground pepper and bay leaf.

Add water until everything is covered

Bring to a boil and lower to medium heat for approximately 35-40 min (stirring every 10 min).

When the potato is done, remove all the vegetables and mash them.

Pass the mashed vegetables through a potato masher (or with a strainer to avoid lumps) and add it back to the pot.

Stir, leave for 5 more minutes and that's it!
