1. Put abundant water to boil with salt. Meanwhile, slice the garlic, cut the cherry tomatoes in quarters or halves and set aside.

2. When it starts to boil, add the pasta. Brown the garlic in a frying pan with a good splash of EVOO being careful not to burn, add the chilli and the cherry tomatoes and set aside.

3. Once the pasta is cooked, drain and reserve some of the pasta cooking water (THIS IS IMPORTANT).

4. Add the pasta to the pan with the garlic and oil, mix well, add parsley and stir.

5. Serve the pasta and add about 6 tablespoons of cooking broth per person and stir. Grate plenty of Parmesan on top and eat!!! 😋
