Bring 100 ml of milk to a boil. Cut the lemon rind. When the milk comes to the boil, turn off the heat and add the cinnamon stick, the lemon rind and the opened vanilla pod. Let it infuse for 5 minutes.

Separate the yolk from the white, reserve the white. Mix the yolk with the 25 grams of corn flour and 50 ml of milk. We can use a mixer, so that there are no lumps.

Remove the lemon rind, the cinnamon stick and the vanilla pod from the milk. Remove the seeds from the vanilla and put them in the milk.

Put it back on the fire, add the mixture of yolk, milk and flour, and without leaving too much time without stirring, wait for it to thicken. *ATTENTION* Do not stop stirring as it sticks.

Once it has thickened, put it in a non-stick baking pan, cover it with cling film to prevent it from drying out and let it cool for 3-4 hours.

Preheat the oven to 250°. Cut the dough into squares. Dip the squares in the egg whites and bake for 15 minutes.

Take them out of the oven, and dip them in cinnamon.
