The first thing we will do to prepare this recipe for baked sea bream with potatoes will be to prepare the fish. We take the cleaned and well drained sea bream and we make three cuts on one of the sides. We salt it with coarse salt on both sides, we place a slice of lemon in each of the cuts and we reserve it.

Next, peel the potatoes and onions. Cut the potatoes into baker's slices, the onion finely and add extra virgin olive oil to the baking dish.

Put a frying pan over high heat with plenty of extra virgin olive oil and lightly fry the potatoes. When the potatoes begin to brown, drain them and place them in the baking dish. Remove the oil from the frying pan, lower the heat, add a little extra virgin olive oil and fry the garlic and onion. When the onion begins to color, place it in the baking dish on top of the potatoes.

Next, place the sea bream in the dish on top of the potato and onion bed. Sprinkle it with extra virgin olive oil and a dash of lemon juice and put it in the preheated oven at 180º C for 15 minutes.

After 15 minutes, remove the dish from the oven and sprinkle the fish and potatoes with the white wine. Put back in the oven for another 10 minutes.

After 10 minutes, the fish should be done and the surface of the crust should be golden brown. Remove from the oven, add some chopped fresh parsley and the sea bream is ready to serve.
