Chicken quesadillas with guacamole and pico de gallo

Boil a chicken breast. Poach half an onion with a clove of garlic chopped very small and add the boiled breast in strips (it shreds very easily with two forks).

Add 2 tablespoons of homemade tomato sauce and 1 tablespoon of mustard, salt to taste, paprika and pepper.

Cut half an onion and divide into 2 containers. Cut a piece of green bell pepper and a piece of red bell pepper into very small squares. We also cut 1 tomato into small squares and divide into 2 containers. In the first bowl we have tomato and onion, add the peppers, vinegar, oil and salt (pico de gallo).

In the second bowl we have onion and tomato, add half an avocado, the juice of half a lime, salt and pepper. You can add optional cilantro. Crush everything together with a fork.

In a frying pan put a whole wheat tortilla, the stewed chicken, mozzarella and put a second tortilla on top. Cook for 2 minutes over high heat on each side.

Cut in four and serve with our guacamole and pico de gallo. If you like jalapeños, they also go very well, I didn't have any on this occasion.
