Tofu with soy and ginger sauce

Cut a block of tofu into squares and wrap it in kitchen paper to remove moisture. When it is dry, we pass it through the pan until it is golden on all sides (it can also be baked in the oven, about 15 minutes at 280).

In a saucepan bring to boil: 1 1/2 cups of water + 1/4 cup of soy sauce + 2 chopped garlic cloves + 1 tablespoon of ginger powder + 1 tablespoon of EVOO and 1 tablespoon of rice vinegar. Let it boil for 5 minutes

Dilute 2 tablespoons of rice flour in water, about 3-4 tablespoons, and mix well. Add to the saucepan and stir. Let it boil for about 3 minutes and let it rest off the heat for 3 to 5 minutes more before serving.

Serve the tofu cubes on a plate, with sauce on top. Garnish with sesame seeds and chopped chives.
