FIRST and IMPORTANT: FREEZE the salmon for at least 5 days to avoid parasites. Then let it thaw in the refrigerator. Once we have the salmon we start!

Cut the raw salmon into squares.

In a bowl mix 2 tablespoons of oil, 2 tablespoons of soy sauce, the juice of 1/4 lime, 1 teaspoon of dijon mustard and spices to taste and stir it all together. Mix the resulting sauce in a bowl with the salmon, cover with foil and let stand in the refrigerator for 15-20 min.

Once the salmon has marinated, dice the tomato, mango and avocado.

Now to assemble the tartar, use a round mold (or if you don't have one and you're not very good at it like me, you can use the cardboard of a large yogurt cut). Put a first layer of avocado, then the mango and tomato and finally the salmon. Press a little against the mold so that it fits and is more compact. Remove the mold and you can decorate the top as you like: with leaves, cilantro, etc. I also put a little ball of mozzarella on top, and READY TO EAT! 馃憣馃徎馃構
