Protein pancakes white chocolate and blueberry jam

Mix the egg whites, the white chocolate protein and the ground oatmeal until a homogeneous paste is formed. Grease a non-stick frying pan with EVOO, removing the excess with the help of kitchen paper. Pour our pancake mixture into the pan, 2 minutes on each side.

While the pancakes are cooking.... We make the blueberry jam 🫐. Option 1 Conventional pot: We take a saucepan or pot and put 40 gr of blueberries we add the water and put on low heat until the blueberries are undone, stirring then. Approximately we cook for 5 minutes until they are undone. Option 2 microwave: We put the 40 grams of blueberries in a microwave-safe container and 1 tablespoon of water, take to the microwave and put 1 minute and a half. Remove and stir well and put it back in the microwave, 1 minute more. If it is too liquid, we can add a teaspoon of cornstarch and integrate very well.

Serve on a plate and top with our blueberry jam and some blueberries. Enjoy your meal ☺️
