First cut the onion into julienne strips and the potatoes. Add the two things already cut to the pan over medium-low heat and keep for 25 long minutes until the potato begins to brown.

We take out the potato and onion mixture and in a bowl we have prepared the eggs already beaten and salted. Mix everything well until it is completely mixed and add it to a frying pan with a little oil. I cook it for two minutes on each side. This is to each person's taste. Personally I like my omelet a LITTLE COOKED ! 🙈🙈 and after this you can enjoy one of the best delicacies of our country.
