We cook the pasta. In a frying pan put the pieces of peppers cut in small pieces with a drizzle of oil and salt. Add the spinach to the pan and let it cook well.

Once the pasta is ready, serve it. Garnish with vegetables and spinach and add homemade pesto. Top with crushed pistachios and parmesan cheese.

For the PESTO I used a good splash of EVOO, two cloves of garlic, a bunch of basil, black pepper, cashews, salt, garlic and onion powder. We put it all in a blender, blend, taste and correct salt if necessary. And it's ready.
