Rice with vegetables and shrimps

Here are the actual ingredients: ▪️50g of brown rice or your required portion (I put 100 g because it is my portion) ▪️150 g of shrimps after peeled ▪️1 piece of chopped onion ▪️1 piece of eggplant ▪️1 piece of zucchini ▪️1 piece of red bell pepper Don't be afraid to add vegetables to the failure, the more vegetables, the more nutrients, the more flavor and the more satiety without providing almost any calories 😉 Spices to taste (I put black pepper, turmeric and ginger). I don't use salt, but you can use to your taste.

On the one hand we will put water to boil, we will peel the shrimps and we will throw those shells in the water, we will give it a boil for approximately 10/15 minutes.

On the other hand, chop the vegetables to taste and poach them in a pot with olive oil. When they are well poached (here you could grind them if you want, I like them in pieces) add the peeled prawns and sauté for 5/10 mins.

It is time to add the rice and sauté for about 2 /3 mins. stirring from time to time. This makes that the rice does not overcook and remains al dente.

Add the water from cooking the shrimp shells strained through a strainer until it covers the rice, vegetables and shrimp. Stir. If you have water left over, reserve it in case you need it, you can also add a little water to the shells if you need it (here it would not be necessary to coddle it, as it will have the same flavor).

Let it cook as long as it says on the package, each rice is different, counting from the moment the water starts to boil. Stir from time to time (without making it dizzy) and correct the water (from the husks) if necessary.

Once the time has elapsed, check that the rice is done and turn off the heat source, cover and let it rest for 5 minutes.

Serve and enjoy! A nutrirse!!!!
