Chop the onion and garlic and sauté with a pinch of salt. In the meantime, cut the pumpkin into 1 cm pieces.

Add the crushed tomato and pumpkin and cook for 5 minutes over low heat.

Add the lentils and the can of coconut milk. Fill the can with water and pour into the pot. Add the spices.

Cook covered for 10-15 minutes. Although I recommend that you keep an eye on them, if you spend too much time they will fall apart 👎🏽

Boil basmati rice with bay leaf, garlic and fennel.

Serve accompanied with rice 😋.
