Lentil pasta with textured soybeans

Boil the lentil pasta: pour water in a saucepan, bring to the boil and add the pasta and a pinch of salt. Follow the manufacturer's instructions for cooking time.

At the same time, let the texturized soybeans stand in a bowl with hot water to hydrate them. Approximately for 15-20 minutes. Once the time has elapsed, drain well.

Heat a frying pan with AOVE, and add the soy until it browns. Then add the crushed tomato and leave over medium heat for 5 minutes.

Add the desired spices. In my case I used sweet paprika, oregano and garlic powder.

Add the pasta to our sauce, and stir everything well over low heat.

Finally add cherry tomatoes and black olives (optionally you can add a little grated cheese on top).
