Season the rabbit with salt and pepper in a frying pan with olive oil. Remove the rabbit and add the vegetables. We will cook them until they are poached

Add the rabbit and the wine together with the vegetables. When the wine evaporates add water and cover for about 15 minutes.

Mix the mustard with the milk or cream. Add this mixture to the pan when the water has evaporated. Add a little parsley and turn off the heat when the sauce has thickened to taste.
