Heat a little EVOO in a frying pan, and when it is hot add 2 cloves of sliced garlic, and then the onion chopped into small cubes.

Let it cook for about 5 minutes over medium-low heat, and add the rest of the chopped vegetables, to taste. In this case I have added some green bell pepper, red bell pepper and zucchini. Add salt and pepper to taste.

Continue cooking for 5 minutes and add the diced fish fillet.

After another 5 minutes, when the fish is done, add 2 tablespoons of crushed tomato or a skinless tomato cut into small cubes. Integrate completely and remove.

With a little oregano sprinkled on top it is even better!
