Grate the whole wheat stale bread 100%. I have used the Mambo robot for this with the turbo function.

Beat one egg (yolk and white).

The veal fillets are pounded with a mortar and pestle to break the fibers and make it easier to eat.

A small veal booklet is made by putting cecina and blue cheese or any other filling of your choice inside it. Close the booklet and you can put toothpicks in it so that the structure holds better.

The booklet is dipped in breadcrumbs, egg and breadcrumbs again.

Then put it in the preheated airfryer (200°, 5 min). Add a little EVOO on both sides using a spray and program 180° for 13 minutes. Halfway through, turn the cachopo over.
