Mash the cooked potato with a fork. Then mix with the dates, the ground almonds and the lemon zest.

Make small balls by hand and coat them with the egg white to coat the dough with pine nuts or almonds.

Glaze the panallets with an egg and put them in the preheated oven at 180 ºC for 15 minutes (the last 5 minutes we program the oven so that only the top part browns).
