Broccoli waffles

Wash and cook a broccoli floret. I have also used the stem, to cook it like the rest just cut it into small pieces. In total I used about 230g of cooked broccoli. When it is soft, remove the water and add it to the blender.

Together with the cooked broccoli add the eggs, oat flour, yeast and spices to taste. Beat a little and add salt to taste. Continue beating for a while more, until a homogeneous dough is formed.

We heat the waffle iron (in my case, it is the one from Lidl), add a little dough and close 5-6 minutes.

And that's it! You can put whatever you want on top! I have put: cottage cheese, smoked salmon, avocado and yogurt sauce (Greek yogurt, pickles, pickled chilli, black olives, onion, EVOO, salt and spices). Enjoy!
