Mix flour and yeast in a bowl.

Form a volcano and pour the liquids (vegetable drink and EVOO) in the center of the volcano.

Gradually add the flour to the center of the volcano until a homogeneous dough is obtained.

In a separate bowl, grate the zucchini WITHOUT PEELING. Pour it into a colander, press lightly and let the liquid drain.

Once dry, season with salt and paprika. We incorporate it to the previous dough, knead it until we obtain a smooth dough and let it rest for 30 minutes at room temperature.

Brush a non-stick frying pan with EVOO, margarine, coconut butter or your favorite fat. Once hot, pour a little of our dough, turn the pan making circumferential shapes, so that the dough spreads well.
