Chop all the vegetables (carrots 🥕, zucchini 🥒 and onion 🧅) and put them in a casserole, add vegetable broth without covering the vegetables, as the zucchini releases a lot of water.

Add salt, a dash of extra virgin olive oil and a teaspoon of nutmeg.

Let the vegetables cook, especially the carrot which takes a little longer. And blend with the blender, correct the salt content, and voilà!

To serve, we prepare some croutons of whole wheat bread, a leaf of parsley, and a few drops of EVOO 🍴. IT'S DELICIOUS!!!!
