Separate the whole leaf from the cabbage. Do this carefully so that it does not break. Fry the cabbage in a pan with butter.

In the frying pan we fry onion, peppers and carrots. When they are a little browned, add the fried tomato and a little water. Cook for 15 minutes over medium heat.

Boil water in a pot and add a little salt. Cook the chicken without overcooking. The time depends on how thick the chicken is. When the chicken is ready, we shred the chicken using 2 forks. Or you can cut it into small pieces. We join it with the tomato sofrito. If you want to make a vegan version, you can use only vegetables, seitan or tofu.

For the bean sauce, clean the beans and put them in the blender with a little water. It should be a little liquid, like a béchamel sauce. Pour half of it on the baking tray and spread.

To assemble the burritos, take the fried cabbage leaf and add a tablespoon of the sofrito with chicken. Wrap it as if it were a gift and place it face down on the tray over the bean sauce. Do the same with the rest. I could fit 8 burritos. When they are all ready, pour the rest of the bean sauce on top.

With the oven already heated to 200 degrees we put the tray and let it cook for 20-30 mins.

When they are ready, add the cheese and put in the oven for 5 minutes to gratinate.
