First, we split the avocado into slices, thus creating the three bases.

Grill the egg whites in scrambled mode and add them to the first avocado base.

First we poach the diced onion and add the lentils to the frying pan to heat them a little and add this on top of the egg whites, to put the next base on top.

We cut fresh cheese to put on top and add lentils again.

Place the last avocado base and grill the egg, which will be placed in the hole left by the avocado.

To decorate and add flavor, we have sprinkled the leftover lentils and added some cherry tomatoes, arugula and garlic powder.
