Soak 8 pitted dates in 125 ml of oat drink (the rest will be used for the frosting).

Put 25 grams of walnuts in the mixer bowl (the rest are reserved for decoration), the grated carrots, the eggs, the flours, the oil, the yeast and the mixture of dates and oat drink (previously crushed and made into a homogeneous mixture).

Beat all the ingredients well and pour into a baking pan for 30 minutes at 180 degrees (depending on the oven). It will be done when we put a wooden toothpick in and it comes out clean.

While the cake is being made, we make the frosting. Mix 125 ml of oat drink with 6 dates and let them soak for a while. Then add the 150 gr of cashew nuts (soaked overnight) and beat until everything is well blended.

Once the cake has cooled, pour the frosting on top and decorate with some chopped walnuts. 😋 Bon appetit!
