Finely chop the onion, garlic, carrots, beets and cabbage.

Fry the onion and garlic in a large pot with a little olive oil. When it is poached add the carrot and the beet for 5 minutes.

Add the cabbage and the thighs (if using meat) and cover with water to cover a little on top. Add salt to taste.

Let it cook for about 30 minutes and it's ready!
