Protein pancakes with chickpea flour and egg whites

In a mixer or shaker, beat the egg whites. Add the chickpea flour and beat well again.

Add the yeast and spices to taste. With sweet paprika they are delicious.

In a griddle or frying pan greased with coconut oil or EVOO, we make the pancakes. The trick is that it is previously heated and make them over medium heat. When you see bubbles forming on the top, turn them over.

We can use them as classic pancakes or as fajitas. Fill each one with the ricotta cheese.
