Peel the potato and the zucchini. Cut the potato, zucchini and eggplant into slices and put them in an oven tray with a little oil, salt, garlic and pepper. We take it to the oven for 20 minutes.

In a frying pan, put a little oil and fry the onion. When it is poached, add the chicken and fry it until it changes color. Add the diced tomato, the tomato concentrate, the thyme, the basil, the salt and the garlic (we can also add some cinnamon). Then pour half a glass of red wine and let it cook for 10 minutes.

We make the béchamel sauce. In a saucepan, over medium heat pour 250ml of milk, when it is hot, add two pieces of butter and wait for it to melt. In a glass we mix cornstarch and 200ml of milk, and we add it little by little to the saucepan, we stir little by little, and we add nutmeg and salt, until it thickens.

In a baking dish, put a layer of sliced potatoes, then the zucchini, eggplant and chicken. Repeat the process until all the ingredients are used. Pour the béchamel sauce on top and sprinkle with cheese.

We put it in the oven for 30 minutes, until the cheese is melted and golden brown.
