For the "non-biscuits Dip the bread slices in oatmeal drink and toast them in the pan with coconut oil (as if they were French toast). You can add a little bit of panela for more sweetness. Once they are golden brown and juicy on the inside, they are dipped in black coffee and placed in the base of the mold.

For the cream: Whip the egg white until stiff Beat the egg yolk with panela (option 1). Add the egg white to the mascarpone (option 2: previously mixed with date syrup) with enveloping movements. Add the egg yolk

Once the cream is ready, we put it on the slices of the base. Dip the new slices in coffee and cover them again with cream. Finally sprinkle pure cocoa on top. Refrigerate for at least 4 hours (I left it for a day).
