Lentil curry with vegetables

Cut the onion and put it over medium heat. Then add the rest of the vegetables (your choice, I had these in the fridge), the red bell pepper, the zucchini and the garlic.

After 5-10 minutes cooking the vegetables, add the jar of lentils and the curry powder. Stir and wait 2 minutes approx. Add the coconut milk, mix everything well so that it is uniform and wait 5 minutes for it to rest with the fire off. Add parsley and cashew nuts for a crunchy touch 👌. Ideal to accompany with rice, quinoa or any cereal.
