In a large pan cook the mussels (I bought a mesh of mussels at the fishmonger's, the ones that come clean, it is better to cook them yourself to use the cooking water for the sauce). Count about 300 ml of water over high heat with the lid on, as soon as the foam comes up and the lid is almost lifted, turn off the heat and they should have already opened.
