Wash the mushrooms well, chop them and sauté them in the pan with the eggplant and the bell pepper. Add the chopped chicken together with the vegetables and sauté a little.

On the other hand, we put a pan with water to boil,  and when the water is boiling, we throw the gnocchi for about 3 minutes. When they begin to float in the water is when we remove and set aside.

To make the sauce, we only split an onion,  a clove of garlic and a peeled mango. We poach  everything in the pan until it becomes a paste, add a little salt and two tablespoons of curry.

Once the sauce is ready, add the vegetables with the chicken and the gnocchi to the pan. and the gnocchi to the pan, mix everything together and let it cook for a few more minutes.

Finally, add the Provencal herbs and the dish is ready to eat ✅.
