First of all we put the water in a pot to boil, while we leave the rice that we are going to use in a plate with water to eliminate impurities. When the water starts to boil, add the rice (previously drained of the water from the dish where it has been), add a drizzle of oil and a teaspoon of salt.

While the rice is cooking, cut the chicken breast into pieces and add salt, previously we make over low heat in a pan with a drizzle of oil, when it is done we take it out.

Then in the same pan, put a little oil and put the onion over low heat. When it is golden brown, add the tomato and stir, then add the coconut milk and mix and stir everything. When everything is well mixed, increase the heat a little more, so that it thickens. Add the chicken, curry and salt and stir (the curry and salt can be added to your taste, if you add and taste). When the sauce is half thick, it also depends on your taste, you can remove it and it is ready!

Remove the rice and drain. Season with salt and pepper and serve as a side dish.
