Boil water, pour tomatoes for 10 seconds, remove tomatoes and peel them.

Cut tomatoes, onion and garlic into very small, dwarf pieces.

Sauté the onion and garlic in a casserole or frying pan with 2 tablespoons of olive oil for 3 or 4 minutes over medium heat, stirring occasionally with a wooden spoon. Add the tomato and continue frying for another 8 minutes.

Add the cup of quinoa and the vegetable broth. When it starts to boil, reduce the temperature to simmer gently for 15 to 20 minutes, until the quinoa grains become translucent. If the broth dries out before the grains are well cooked, add a little more.
