Cut in julienne the onion to caramelize it, over low heat and well shaved with a drizzle of EVOO, it needs its time from 30' to 1h. Stir from time to time (the onion is optional but highly recommended).

Cooking the rice

Cut the chicken breasts into squares and season with salt and pepper, then grill them.

Peel and mash the avocados until a homogeneous mass is obtained.

Add the chicken and rice to the avocado and mix well (you can also add some ham/bacon cubes). Then transfer it to a baking dish and add the cheese on top. With the oven already preheated to 200°C, heat the cheese on top.

Once out of the oven, put the caramelized onion on top.
