Peel and wash the artichokes, cut them thinly, in slices and in half, while heating the oil in the frying pan.

Chop the garlic clove and the garlic tender.

Add the artichokes to the pan over medium heat and when they are a little browned add the garlic.

Salt and lower the heat, cover and let them poach. Beat the eggs well, add salt. Turn up the heat and mix with the artichokes.
