Sweet potatoes stuffed with tuna and spinach

Cut the sweet potatoes in half and cook them for about 30 minutes. Steamed or baked.

Empty them leaving a little pulp and season with salt and pepper. Reserve the pulp.

Sauté the onion, then add the spinach and sauté for 2 minutes. Remove from heat

Add the pulp, the drained tuna, the eggs and the cornstarch. Season with salt and pepper and mix well.

Add the filling to the sweet potatoes and a little cheese on top.

Bake for about 10 minutes at 210 degrees. Until golden brown
