Wash the eggplants (in my case 3 small ones) and put them in the oven at 150 degrees for about 1 hour. Depending on the oven will take more or less time, you have to be aware and check the consistency of the interior.

When the eggplants are ready (hard skin but inside texture of escalivada) we take them out and let them cool.

Remove the skin and place the inside of the eggplant in a tall glass (to whisk it in later).

Add the juice of half a lemon, a teaspoon of salt, a tablespoon of EVOO, half a clove of garlic, a teaspoon of cumin and a tablespoon of tahini in the glass with the eggplant.

Whisk it all together, taste and correct to taste! You can add more lemon, salt, cumin, tahini depending on how you prefer!

Ready! It should be like hummus but less thick.
