Buckwheat, quinoa, millet and chia bread

First we wash the quinoa and soak it for about 8 hours. We also hydrate the chia.

We ground the millet. I had the buckwheat already ground.

We take out the quinoa and drain it and beat it together with the chia and the rest of the flours (millet and buckwheat), the yeast and the salt. We add warm water as we see and we knead. To me the times that I have made the dough is very sticky, I think it is normal (ie I do not get like when I make bread with wheat flour a compact dough) so I always turn the dough in a nonstick pan or baking paper. And let it rest for 24 hours and cover it with a kitchen towel.

If you want, you can add seeds on top: chia, sunflower seeds...
