TRUQUINOE: fill a pot with water and cook the ribs for 10-15 minutes. This helps the meat to separate better from the bone.

Once the cooking time has elapsed, place the ribs on a baking tray previously sprinkled with olive oil.

Now add the ingredients (except the potatoes and onion) on top of the ribs to season them: salt, pepper, parsley, chopped garlic or whole cloves, as you like.

Preheat the oven to 200° and cook for half an hour. After this time we turn them over, add the white wine, the potatoes and the onion and cook for another half hour.

If you like them crispy, turn them over again and raise the oven to 220° for about 15 minutes.
