Beans with pesto vegetables

To prepare the beans: soak for about 12 hours and cook for 25 minutes in the pressure cooker with water (should cover the beans), a dash of oil and the bay leaf.

Grind the basil leaves with the olive oil and the pine nuts until you get the pesto sauce. As the quantities are small, I advise to use the mortar and pestle as the blender does not work very well.

While the beans are cooking, cut the vegetables into small cubes and cook with a little oil slowly over low heat. When they are almost done, add the onion and garlic powder.

Finally, mix the beans with the sauce and pour over the vegetables. Enjoy! 😋
