Grate a potato over a fine sieve. Once grated, drain and squeeze out the water with a fork. Add salt (if you want you can add pepper, coriander powder...).

Make the guacamole. In this case I made it with avocado, half a small chopped onion, some chopped cherry tomatoes, a small teaspoon of mustard, a squeeze of lime, salt and cilantro.

Make little balls with the grated potato (take advantage to remove more water if it remains). Place the balls on baking paper

Place another piece of baking paper on top and flatten with a skimmer or rolling pin.

Heat a non-stick frying pan with a few drops of oil. Once hot, put the tortillas in with the help of the skimmer to catch them. Let them brown on both sides (it takes about 8 minutes in total at medium-high heat).

Take them out and add the guacamole, tuna and a little cilantro. Take them straight out and go for it! They get cold!
