Add the bay leaf, salt and pepper. Not having fish stock I used a can of ventresca (with the oil and everything). Add the crushed tomato and 2-3 glasses of water. It depends on how consistent you want it

Boil over medium high heat, covered, for 20 minutes.

Remove the bay leaf and also some of the shellfish for decoration.
