In a saucepan put the oil, when it is hot, add the garlic, which we take out when it is fried. Add the meat previously chopped, it can be pork or lamb. When it is browned, add the vegetables cut in small cubes.

When everything is sautéed, add the paprika and the wine until it is reduced. Add the pepper, bay leaf and cover with water and cook for about 45 minutes over low heat, until the meat is tender.

Once the cooking is finished, grind the almonds with the fried garlic with a little of the broth from the stew. And add it to the stew, together with the thyme and cook again for about 5 minutes to mix everything.
