Heat the extra virgin olive oil in a frying pan or wok. Chop the salmon and cook for 3 minutes. Reserve the salmon.

Cut the broccoli into florets and the carrot into slices. Add to the pan and cook for 15 minutes with the lid on. Meanwhile, boil the rice in a saucepan.

With the rice ready, add to the pan, add the soy sauce, pepper and stir. Finally, add the salmon and that's it!
