Cook the breast in a pot with water for about 20 minutes. In the meantime, put a pear tomato in pieces in the blender, with a dash of oil, pepper and a little soy sauce. Blend everything. We put a fajita in the pan and apply the tomato sauce with a spoon to facilitate the distribution. We put over it the slice of sheep cheese in small pieces and we put the fire to low temperature so that the cheese melts. Once the breasts are finished, with the help of two forks we tear them into pieces. We put it on the fajita and we make the quail eggs to put them also on top.

Finally we put the arugula on top and apply special to taste. I have opted for a little black pepper. Enjoy!
